Cool, Refreshing Appetizers

Cucumbers are simply refreshing. And their simplicity is what makes them the perfect foundation for a wide variety of appetizers and snacks. Did we mention how easy it is to throw together some tasty cuke-based treats for an impromptu cocktail party or get together? If we can do it, you certainly can, too. Here are our creations with a list of ingredients used. Try them out as listed or be creative and mix it up! What’s your favorite dish featuring cucumbers?

Dan’l’s Trio of No Cook Cucumber Canapes
Ahi Tuna Tartare – sushi grade ahi tuna (diced into small pieces), fresh lemon juice, olive oil, minced shallots, and a sprinkle of chopped chives. Grey salt optional.
Deconstructed Greek Salad – Campari tomato (inlayed in the cuke), fresh feta cheese, julienned shallot and a mist of aged balsamic vinegar.
Goat Cheese Sammy – black pepper goat cheese, radish and chives

Marci’s Masterpiece – whipped cream cheese, fresh dill and garlic salt. Yep, it’s really that simple. And that delicious.

Megan’s Chicken Salad on a Cuke – roasted chopped chicken, Granny Smith apple, mayonnaise, Dijon mustard, fresh parsley, roasted almonds, sweet onion, salt and pepper to taste. And, of course, cucumbers, skins removed and sliced about ¼ inch thick.

Brock’s “Of Course There’s Bacon In Them” Cuke Apps – Greek yogurt, fresh grated parmesan, bacon crumbles and sea salt. Hastily stirred together and plopped onto a cucumber slice.

Heidi’s Southwest Crab Cukes – cucumbers, sour cream, salsa, fresh crab meat, tomato, and shredded cheddar cheese. The “cool as a cucumber” base is the perfect balance for the spicy topping.

Dan’l made her amazing trio of cucumber-based Canapes for me & my husband on Wednesday evening, & we demolished all of them within a few minutes – prefectly healthy & delectable! Thus, while all the other cucumber recipes look wonderful too, my vote goes to Dan’l
